Roasted Beets with Walnuts and Brie

I was so excited when I went to the garden to weed and realized the beets were finally getting big enough to start harvesting.  Here is the recipe I threw together for this first pick.

6 beets
1 Tablespoon Grape seed oil
salt to taste
1 Tablespoon balsamic vinegar
1/4 cup Brie cheese
1/4 cup walnuts

Quarter the beets (peel if you like), drizzle with grape seed oil, sprinkle with salt, and bake at 425 degree Fahrenheit for 45 minutes.

Remove the cover, drizzle the beets with the vinegar...

...load on the Brie cheese... with walnuts. 

Then bake another 5 minutes.
