Cod Parchment Packets

So, to continue from my last post, Day 3 of our fish challenge my son and I went out for Thai food.  But, since the food this time was not at all good, I will spare you the details (this one we will not be returning to).  But that then takes us to Day 4 and the cod packets I made and then served over my son's favorite pasta, tortellini.

Here is what you need for this recipe:
2 cod fillets
1/4 cup fromage blanc (or any other soft cheese of your choice)
1 red onion sliced
 a few frigs of fresh cilantro

To make the packets, line 2 pieces of foil with sheets of parchment.  Next, layer the fish, then the onion, and finally the soft cheese.  Season to taste.

Then fold the parchment first into a package and then around that seal it up in the foil.

To cook the packets, you can either put them in a 350 degree oven for 20 to 30 minutes (depending upon the thickness of your fillet) or put them on the grill for 15 to 20 minutes.
