Natural Mint Patty Chocolate Cups

Well, why stop with just one experimental recipe?  That's what I asked myself.  Since my daughter Maggie and I were on a roll with these chocolate cups, and I had some well drained Fromage Blanc in the refrigerator, I decided to see if I could flavor the cheese with mint and repeat the recipe to try and make a mint patty.  Again, a success.  Who knew that mint patties could be almost guiltless!

Here is what you will need for ingredients:
  • 1/2 cup well drained Fromage Blanc
  • 6 drops peppermint/mint stevia drops 
  • 1 cup coconut oil
  • 1/2 cup cocoa powder
  • 2 teaspoons natural mint flavoring
  • 4 Tablespoons honey, raw preferably

Melt the coconut oil, and then stir in the honey, flavoring, and cocoa powder.


Fill the bottom 1/3 of 15 mini silicone baking cups with the chocolate mixture.



Mix the Fromage Blac with the stevia drops.



Then roll 15 balls with the Fromage Blanc and put them into the baking cups.



Finish them off by topping each baking cup with the remaining chocolate mixture.  (Note:  If the mixture starts to get a little clumpy, just heat it up a little and it will regain its smooth consistency.)

  Put the cups into the freezer until they are set.  About 25 minutes.
