Fermented Peanut Butter Cups

Being snowed in has its advantages...it gives me some extra time to be creative in the kitchen.  These peanut butter cups are a combination of a couple recipes which I have used in the past, but yesterday I spontaneously decided to combine them.  The end result turned out even better than I had expected and everyone at our house enjoyed them immensely.  So, if you like peanut butter cups and would love to have a recipe that takes the guilt out of eating one (or maybe two), here is a recipe for you.

Here is what you will need for ingredients:
  • 1/2 cup fermented peanut butter
  • 1 cup coconut oil
  • 1/2 cup cocoa powder
  • 2 teaspoons natural chocolate flavoring
  • 4 Tablespoons honey, raw preferably

Melt the coconut oil, and then stir in the honey, flavoring, and cocoa powder.

Fill the bottom 1/3 of 15 mini silicone baking cups with the chocolate mixture.

Then roll 15 peanut butter balls with the fermented peanut butter and put them into the baking cups.

Finish them off by topping each baking cup with the remaining chocolate mixture.  (Note:  If the mixture starts to get a little clumpy, just heat it up a little and it will regain its smooth consistency.)

Put the cups into the freezer until they are set.  About 25 minutes.

  2. You are right...it is an extract. It is a product packaged by Frontier and it can be purchased at just about any local whole foods store, or if you have a couple of other like-minded people who cook the way you do it is easy to form a co-op and buy directly from Frontier as a wholesale customer.
