Whole Wheat Peanut Butter Muffins

These muffins make a great breakfast or even a healthy treat and they are so moist - you won't even know you are eating whole wheatAlso, what is better than peanut butter and chocolate mixedNot a lot.

Here are the ingredients needed to make 2 dozen large or 3 dozen medium muffins:
  • 3/4 cup SUCANAT
  • 8 Tablespoons butter
  • 1 1/2 cups peanut butter
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 4 large eggs
  • 3/4 cup yogurt and 3/4 cup real buttermilk (you can replace with a mix of milk and regular buttermilk too OR skim milk and yogurt)
  • 3 teaspoons vanilla
  • 1 cup chocolate chips
  • 4 1/2 cups whole wheat pastry flour

First blend together the SUCANAT, butter and peanut butter.


Next add in the salt, soda, and powder.


Now add the eggs.


And then the yogurt and buttermilk.


Finally mix in the vanilla and chocolate chips...


...and finish off by adding the flour.  Mix until well combined.


Scoop into muffin cups.


Bake for 25 minutes at 375 degrees Fahrenheit.
