Chicken Cake on Sprouts with fresh cheese curds
Living in the Midwest means that fresh crab is not easy to come by, and so this recipe is a adaptation I made of a traditional crab cakes using chicken instead.  My family loves to eat these on buns like a burger, but instead I love to pile it onto a bed of sprouts and top it off with a dollop of Homemade Live/Raw Mayonnaise. (This time I added a clove of fermented garlic to the mayo and the combination was divine.)

Here is what you need to make the recipe:
  • 1/4 cup mayonnaise
  • 2 cups leftover chicken
  • 1 slice of bread, chopped
  • 1 large egg
  • butter for frying

Put all the ingredients, except the butter, into a food processor.

Pulse the mixture until it all comes together.

Make patties.

Fry the patties in butter.

Then serve however you like.
