Here is another sweet dip you may want to try that is similar to the blueberry dip I made last month.
- 1 cup raspberries (fresh or frozen)
- 2/3 cup juice concentrate (I used black cherry)
- 1/2 teaspoon xanthan gum
- optional: 2 cups mascarpone
Put all the above ingredients in the food processor and process until pureed.
I added 2 cups of mascarpone to the mix to make the dip extra creamy and to make a larger batch.
