Sugar Plums

OK, so it is not Christmas, but sugar plums shouldn't just be dancing in the heads of children on the night before Christmas. The reason I say that is because these treats are such a healthy snack to have on hand all through the year...just read through the ingredient list and you will see.  But don't tell your taste buds that they are healthy because they will never know if you don't - I am not kidding!




Here are the ingredients needed to make these treats: 
(You will want to half this recipe unless you have a 12 cup food processor like I do)
  • 2 cups almonds
  • 2 cups dried fruit (this time I used 1 cup dates, 1/2 cup raisins, 1/2 cup dried cranberries)
  • 2 teaspoons orange zest
  • 2 teaspoons cinnamon
  • up to 1/4 cup raw honey
  • 1/2 cup of SUCANAT, powdered
  • 1/2 cup flax seed, powdered

Chop the almonds and the dried fruit in the food processor until everything is minced.



Add the zest and cinnamon and process again.



Then slowly add enough honey to make the whole mixture stick together, but not any more.



Roll the mixture into small balls.



Finally, roll each of the balls in the powdered SUCANAT and flax (it is easy to powder each of these in a coffee grinder - I have one dedicated especially for this use).
