Herbed Flatbread

If you like bread AND crackers, you will love this simple flatbread.

  • 1 cup whey (or water)
  • 2 cups whole wheat flour
  • 1 Tablespoon honey
  • pinch yeast
  • 1/4 cup olive oil, plus extra for top
  • 1 teaspoon salt
  • 3 to 4 more cups whole wheat flour
  • Herbs for topping the flatbread

First, mix the whey, honey, and the first 2 cups of flour together with the pinch of yeast and let it sit out, uncovered for a couple of hours.

Next, mix in the oil and the salt. Then add in as much flour as is needed to make a good dough that you can knead without sticking to you. Continue to knead for 5 minutes.

Press out the dough on a sheet of parchment while you heat the oven to 400 degrees Fahrenheit and drizzle a good amount of oil on top.

Spread evenly and then top with herbs of your choice.

Bake for 15 to 20 minutes, or until it starts to brown.

It will be moist like bread on the inside and yet the outside will be a bit crisp like a cracker.  Yum.
