Homemade Live/Raw Mayonnaise


I have heard way too many times that mayonnaise is bad for you.  If you like mayonnaise like I do, you will be happy to know that this homemade version is not only better than the stuff they call "mayonnaise" you can buy in jars in the store, but it is also really good for you because it includes raw vinegar...

 
and a raw egg, both which contain wonderful enzymes.


Here is the simple recipe that you can either make in a food processor or blender. 

Start by adding to your blender or processor the following ingredients:
1 large egg (as fresh as possible)
1 Tablespoon raw vinegar
1/2 teaspoon salt
1/4 teaspoon dry mustard
1/4 teaspoon paprika


Blend for 5 seconds, and then with the blender/processor still going...slowly pour in 1/2 cup oil.



Continue blending and add in 1 Tablespoon lemon juice...Keep blending...


Finally, slowly pour in another 1/2 cup oil...


blend for a little longer and the whole mixture will firm up.
