Apple Cinnamon Crackers and Blueberry Dip

Well, even though I had a lot of cleaning to get down today I just couldn't stay out of the kitchen.  I decided to make some sweet crackers and an accompanying dip.

To make the crackers, mix together the following ingredients:

 1/4 cup water
1/4 cup applesauce/apple butter
1/4 coconut oil, melted  (butter can be substituted)
1 1/2 teaspoons cinnamon
1/8 teaspoon salt
1/3 cup SUCANAT
3/4 cup finely ground corn meal (Non-GMO is best)
1 1/3 cup whole wheat flour (freshly ground if you can)
1 teaspoon baking powder

Blend all of the ingredients together into a stiff dough.



Roll the dough onto parchment paper.  Sprinkle with a little more SUCANAT and cinnamon, making sure to roll it in to make it stick into the crackers.  Then cut into cracker pieces with a pizza cutter.  I then put my parchment paper onto insulated baking sheets so they cook more evenly.


Put the crackers into a 350 degree Fahrenheit oven for about 20 minutes, making sure to flip the pans - top to bottom - about 10 minutes into the baking process.



When the crackers start to get slightly brown, they are done.

To make the dip, put the following ingredients into a food processor or blender and puree until all incorporated:

  • 1/2 cup blueberries (fresh or thawed)
  • 1/2 cup plain yogurt (homemade if possible)
  • 1 Tablespoon honey (raw if you have it)
  • 1/2 teaspoon real vanilla
  • 1/2 teaspoon xanthan gum
